The New York Striploin is considered by many steak afficionados as the best steak. The only cut more tender than the Striploin is the Tenderloin, but at the same time the Striploin will be more marbled and more flavourful than the Tenderloin. Season with salt and pepper and sear both sides; don't cook beyond medium-rare.

The Striploin is also known as the Delmonico and Contre-Filet (French).

Make your own Steakhouse Butter:

  • If you do not have your butter at room temperature, grate it on the large side of a boxed grater & wait a few minutes, or, place in microwave for 10-15 seconds until soft (DO NOT LET IT MELT)
  • Place 4 Tbsp soft butter in a small bowl, add the minced garlic,1/4 tsp kosher salt & finely chopped parsley. Combine with a fork.
  • Place the butter on a piece of parchment paper or plastic wrap, roll into a log, twist the ends (it will look like a sausage) & place in the freezer for 7-10 minutes till firm.
  • Once firm, remove from freezer, peel-off parchment or plastic and slice into half-inch discs. When resting, place atop your steak to melt.
